Cream Cheese Blueberry Pound Cake

 225gm butter, softened
1 (8 ounce) package cream cheese, softened
2 cups fresh blueberries
3 cups sugar
6 large eggs
1.5 teaspoons vanilla extract
3 cups plain flour
1/8 teaspoon salt
  • Preheat over to 150 degrees.
  • Beat butter and cream cheese at medium speed with an electric mixer for 2 minutes or until creamy.  Gradually add sugar, beating 5 to 7 minutes.  Add eggs one at a time, beating until yellow disappears.  Add vanilla and mix well.
  • Dredge blueberries with 1/2 cup of flour (from the original 3 cups) and set aside.
  • Combine remaining flour and salt and gradually add to butter mixture, beating at low speed just until blended after each addition.  Gently stir in berries.
  • Pour batter into a greased and floured 10-inch tube pan.
  • Fill a 2-cup, ovenproof measuring cup with water and place in oven with tube pan.
  • Bake for 1 hour and 30 minutes or until a wooden pick inserted in the center of the cake comes out clean.  Cool in pan on a wire rack for 10 to 15 minutes and remove from pan.  Cool completely on wire rack

Shop Wholemeal Carrot Cake

1 1/2 Cups wholemeal flour
1 1/2 cups self-raising flour
3 cups raw sugar
2 tbsp cinnamon
2 tsp baking soda

Blend well together with fingers

Whisk these together:

4 eggs
2 tsp vanilla
1 1/2 cups oil

Add:

4 cups grated carrot
1 cup crushed pinapple
1 cup coconut
1 cup chopped walnuts

Bake on 150 40 minutes

Shop and Bakery Lumberjack Cake

4 green apples
2 cups chopped dates
2 tsp baking soda
2 cups boiling water

Microwave all for 5 minutes, then set aside to cool.

Add:

250gm butter
2 tsp vanilla essence
1 tsp salt
4 cups plain flour

Bake for an hour on 150. Halfway through baking time add topping:

120gm butter (melted)
1 cup brown sugar
2/3 cup cream
1 cup coconut
1 cup longcut coconut

Lolly Cake

Melt 4oz of butter and half a tin (normal size) of condensed milk.
Be careful not to let it boil.
Crush a packet of malt biscuits until quite fine.
Chop up a packet of Eskimo's into smallish bits.
Mix it all together and on grease-proof paper, shape into a 'log'.
Sprinkle all over with coconut.
Wrap up grease-proof paper around the log and place on hard surface in fridge, preferably overnight.

Mums Carrot Cake

Blend well with fingers:
3 cups wholemeal flour (or use ½ white flour)
3 cups raw sugar
2 tbsp cinnamon
2 tsp baking soda

Whisk together:
4 eggs
2 tsp vanilla
1 1/2 cups oil

Add:
4 cups grated carrot
1 cup crushed pineapple
1 cup coconut
1 cup chopped walnuts

Bake 150 degrees for 40 minutes

Icing is a mix of cream cheese, butter, lemon juice and icing sugar

Nan's Sultana Cake

Cover 450gm sultanas with water, bring to the boil and simmer for 5 minutes.

Strain off the water and cut in 225gm butter, add 1 ½ cups sugar.

Mix well and add 3 beaten eggs, 2½ cups sr flour.

Add some lemon juice.

Cook on 150Degrees for around 1/2 an hour.

Mamma's Banana Cake

125gm butter
175gm sugar
2 eggs
2 mashed bananas
1 tsp bicarb soda
2 tbsp boiling milk
225hm sr flour

Ice with cream cheese icing with lemon juice.
Double this for my tin.
