Dad's Beef Strog

675 gms of good steak into 1cm strips and then across the grain
into1cm strips.
65 gms unsalted butter
1 1/2 tabs hungarian paprika
1 large onion very thinly sliced
350 gms button mushrooms thinly sliced
300 mls sour cream
2 tsps lemon juice
small handful parsley leaves chopped
sea salt and fresh black pepper.
3 tabs sunflower oil.

melt butter in a large fry pan, add the paprika and onion and cook
slowly until onion soft but
not browned.
Add the mushrooms, saute 3 mins, transfer to a plate and keep warm.
heat 1/2 the oil in pan until very hot add 1/2 the beef and fry
quickly seasoning and turning,
this should take about 1 minute, transfer to plate repeat.

return the onion mix to pan and pour in sour cream,
Bring to boil reduce to simmer for a minute until thickened, add the
steak and heat gently for 1 minute.
Stir in the lemon juice and parsley.
The meat should just reheat not cook any further.
Serve with noodles or match sticks potatoes.
