Beautiful Cookie Recipe

2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
225gm butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons orange zest (for me that was the zest of 2 oranges)
2 cups white chocolate chips


Preheat oven to 190 degrees.


In a small bowl, combine flour, baking soda, and salt; set aside.


In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and white chocolate chips.


Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8 - 9 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.


These are awesome, but even just the base is beautiful, if you dont like orange, just make them chocolate - the texture is awesome! x



Mum's Picnic Chocolate Cookies

125gm butter
50gm sugar
3 tsp condensed milk
175gm sr flour
50gm chopped dark chocolate


Cream butter and sugar together, add remaining ingredients and roll into small balls. Flatten with a fork, bake 20 mins at 180.

Best to double recipe.

Mum's Chocolate Mousse

100gm block Toblerone chocolate, chopped
2 eggs separated
1/2 thickened cream

Melt chocolate in a large bowl over hot water.
Mix in egg yolks one at a time, beat until smooth and thick.
Fold in whipped cream and then softly beaten egg whites.
Refrigerate for several hours.

Mamma's Chocolate Brownie

550 gm Cadbury milk chocolate
225 gm Butter
3 Eggs
225gm Castor sugar
75 gm Self raising flour
1/4 tsp Salt
175gm Almonds or Walnuts
5 ml Vanilla essence

Grease and line baking tin measuring 22 x 29cm

Roughly chop half the chocolate and set aside

Melt remaining chocolate with the butter in a heat proof bowl.

Leave to cool slightly.

Mix the eggs and sugar in a large bowl until smooth.

Add the melted chocolate mixture.

Fold in the flour, salt, nuts, and vanilla essence. Mix well.

Add the chopped chocolate.

Pour into prepared tin and bake at 190 for 40-45mins

Leave to cool in the tin. Turn out. Trim off edges and cut into squares.

Do not overcook or the gooey texture will be ruined.
