Mum's Picnic Chocolate Cookies

125gm butter
50gm sugar
3 tsp condensed milk
175gm sr flour
50gm chopped dark chocolate


Cream butter and sugar together, add remaining ingredients and roll into small balls. Flatten with a fork, bake 20 mins at 180.

Best to double recipe.

Picnic Cheese Scones

400gm plain flour
1 heaped tsp baking powder
½ tsp caster sugar
½ tsp salt
150gm soft butter
Rub butter into ingredients and add milk
1 egg

Filling
600gm cooked, cooled and crushed potatoes
2 sliced spring onions
handful chopped rocket
5 heaped tsp parmesan powder
pinches salt, pepper
Mix above ingredients altogether and bind with 2 tbsp cream
1 cup grated cheese
12 slices swiss cheese (for top)

180 fanbake. Roll scone mix into square a little smaller than the tray. Cut dough in half widthwise and cut top half vertically into two. Add egg to a little milk and brush dough with this.
Add some of grated tasty cheese to bottom half of the dough, add the filling and top with the rest of the cheese. Add top dough in 2 pieces, and cut into 12 scones.
Top with sliced gruyere and season with pepper. Bake for 10 mins and turn and bakes another 10 mins.

Lolly Cake

Melt 4oz of butter and half a tin (normal size) of condensed milk.
Be careful not to let it boil.
Crush a packet of malt biscuits until quite fine.
Chop up a packet of Eskimo's into smallish bits.
Mix it all together and on grease-proof paper, shape into a 'log'.
Sprinkle all over with coconut.
Wrap up grease-proof paper around the log and place on hard surface in fridge, preferably overnight.

Mums Shortbread

1/2 lb butter (I use the regular kind. Butter needs to sit at room temperature for a while to be soft enough- not oily though.)
3/4 cup caster sugar
2 and 1/2 ounces cornflour
10 ounces of plain flour
1/4 teaspoon salt

Cream butter and sugar and then add in remaining ingredients. Mix well.
Turn out onto a long strip of greaseproof paper. Shape into a log and cut into 40 pieces.
Bake in a cool oven (160 C) for approximately 25 minutes until golden. (They brown up more after they are removed so be careful.) Cool on a wire rack.

Mums Carrot Cake

Blend well with fingers:
3 cups wholemeal flour (or use ½ white flour)
3 cups raw sugar
2 tbsp cinnamon
2 tsp baking soda

Whisk together:
4 eggs
2 tsp vanilla
1 1/2 cups oil

Add:
4 cups grated carrot
1 cup crushed pineapple
1 cup coconut
1 cup chopped walnuts

Bake 150 degrees for 40 minutes

Icing is a mix of cream cheese, butter, lemon juice and icing sugar

Nan's Sultana Cake

Cover 450gm sultanas with water, bring to the boil and simmer for 5 minutes.

Strain off the water and cut in 225gm butter, add 1 ½ cups sugar.

Mix well and add 3 beaten eggs, 2½ cups sr flour.

Add some lemon juice.

Cook on 150Degrees for around 1/2 an hour.

Meringues

1 egg white
3/4 cup castor sugar
2 tsp cornflour
1/2 tsp vanilla essence
1 tsp vinegar
2 tbsp boiling water

Grease a cold oven tray. Beat egg whites until soft peaks form, add sugar and beat until thick. Add other ingredients. Around 5-10 minutes beating.
Cook in a slow oven for one hour 1200 . Cool with oven door ajar.

Mamma's Banana Cake

125gm butter
175gm sugar
2 eggs
2 mashed bananas
1 tsp bicarb soda
2 tbsp boiling milk
225hm sr flour

Ice with cream cheese icing with lemon juice.
Double this for my tin.

Anzac Biscuits

1 cup plain flour
1 cup rolled oats
1 cup desiccated coconut
1 cup sugar
a pinch of salt
125gm unsalted butter
3 tbsp golden syrup
1 tsp bicarbonate of soda

Into a mixing bowl place:
plain flour
rolled oats
desiccated coconut
sugar
salt

Into a saucepan place:
unsalted butter
golden syrup

Stir over a low heat until this has melted.
Put 2 tbsp boiling water into a cup and stir in bicarbonate of soda.
Add to the melted butter mixture – it will froth up.

Add this mixture to the dry ingredients and stir to combine.
Drop spoonfuls of mixture onto baking paper – allow room for biscuits to spread.
Bake 12-15 minutes at 180 degrees and allow to dry well on a rack.
Store in an airtight container.

Mamma's Chocolate Brownie

550 gm Cadbury milk chocolate
225 gm Butter
3 Eggs
225gm Castor sugar
75 gm Self raising flour
1/4 tsp Salt
175gm Almonds or Walnuts
5 ml Vanilla essence

Grease and line baking tin measuring 22 x 29cm

Roughly chop half the chocolate and set aside

Melt remaining chocolate with the butter in a heat proof bowl.

Leave to cool slightly.

Mix the eggs and sugar in a large bowl until smooth.

Add the melted chocolate mixture.

Fold in the flour, salt, nuts, and vanilla essence. Mix well.

Add the chopped chocolate.

Pour into prepared tin and bake at 190 for 40-45mins

Leave to cool in the tin. Turn out. Trim off edges and cut into squares.

Do not overcook or the gooey texture will be ruined.
