Sugar and spice
Diamond score the ham.
Cover knuckle with baking powder and tie.
Stud with cloves.
Combine and brush over ham:
1 ½ cups brown sugar
¼ tsp sherry vinegar
Orange juice?
¼ tsp mixed spice.
Bake 35 minutes
